Actually, there are many versions of meat soup from Indonesia. But now, I am going to share one of recipe how to make meat soup from Madura. The broth of this meat soup is so light and tasty. So, let try to start cooking meat soup.
Ingredients:
- Spare ribs, 500 gram
- Water, 1 L
- Lemongrass, 2 (sliced)
- Orange leaves, 4
- Celery, 2 stalks (bundled)
- Eggs, 6 (boiled)
- Beef stock powder, 1 tablespoon
- Salt, 2 teaspoons
- Sugar, 1 teaspoon
- Oil, 2 tablespoons
Blended seasonings
- Ginger, 4 cm
- Turmeric, 3 cm
- Onion, 7 (sliced and fried)
- Garlic, 5 (sliced and fried)
- Candlenut, 5
- Salt and sugar
Complement:
- Salty soy sauce
- Sweet soy sauce
- Sliced of lemon
- Chips
Sprinkle:
- Fried onion
- Sliced celery
Spicy dish for meat soup
- Red hot chili peppers, 4 (sliced)
- Candlenut, 3
- Salt and sugar (little bit)
How to make meat soup
- Boil the water in the cooking pan. Pour the meat and cook it until half done. Set aside the meat. Cook the broth with small fire. Chop the meat 2 x 2 x 1cm then set aside.
- Prepare frying pan. Pour the oil into frying pan then cook the blended seasoning until smelly and done. Then put the chopped meat into frying pan. Stir it.
- Pour the meat into the broth with boiled egg. Add beef stock powder, salt, sugar and celery. Cook the meat until the meat soft.
- Put the lemongrass into cooking pan and cover it back. Cook the meat and the broth until done.
- Lift the soup and served.
Steps to make spicy dish for meat soup
- Boil all ingredients except salt and sugar.
- Strain it then blend all ingredients with sugar and salt.
Serving meat soup
- Strain the egg and slice into two.
- Put the chunks of meat in the bowl. Add the egg into the bowl.
- Pour with the broth, celery and fried onion.
- Meat soup can be served with rice, chips, sweet soy sauce, salty soy sauce, sliced lemon, and spicy dish.
Tips:
- You can replace spare ribs with 200 gram meat.
- If you want to minimize the fat of meat soup, after you boil the meat, throw the broth in the surface. Then cook it again.
