How to Make Apple Sauce

Apple sauce is kind of sauce that made from apple and boiled. Both of peeled or unpeeled apple can be used which it mixed with other condiments and cinnamon. Sometime, people use sugar to make apple sauce so that it has sweet taste. It is easy to make apple sauce at home. But if you do not have time to make apple sauce, you still can buy apple cause in the supermarket. However, if you want to make your own apple sauce, here is the recipe how to make it.

Ingredients
  1. Apple juice, 300 ml
  2. Green apple, 50 gram (grated)
  3. Sugar, 1 teaspoon
  4. Cornstarch, 2 teaspoon (added 2 teaspoon of water)
Directions to make apple sauce
  1. Prepare sauce pan. Cook apple juice, grated apple, and sugar until boiled with small flame for about 30 minutes.
  2. Add cornstarch into sauce pan and stir it again.
  3. Afterward, filter the apple sauce to separate the skin and seed of apple.
  4. Cook it back with small flame until the sauce becomes a half.
  5. Remove it from stove.
  6. Apple sauce is ready.

How to Make White Sauce for Steak

White sauce for steak has special taste and you can make it at home easily. And here is the recipe how to make white sauce for steak.

Ingredients:
  1. Margarine, 5 tablespoons
  2. Onion, ½ (chopped finely)
  3. Garlic, 2 (chopped finely)
  4. Protein flour, 2 tablespoons
  5. Fresh milk, 200 ml or coconut milk 200 ml
Directions to make white sauce
  1. Fry onion and garlic until you get fresh smell.
  2. Add flour and stir it well. Pour fresh milk slowly and stir it again.
  3. Cook the sauce until boiled.
  4. White sauce is ready.

How to Make Sweet and Sour Sauce

Sweet and sour sauce
Sweet and sour sauce is often to be used to cook seafood. So, if you bore to use sweet soy sauce and tomato sauce to make your seafood, you can make sweet and sour sauce to get different taste of your seafood. And here is recipe how to make sweet and sour sauce.
Ingredients:
  1. Red tomato, 500 gram
  2. Water, 150 ml
  3. Margarine, 1 tablespoon
  4. Red shallot, 3 (chopped finely)
  5. Garlic, 2 (chopped finely)
  6. Red hot chili pepper, 3 (sliced diagonally)
  7. Ginger, 4 cm (sliced finely)
  8. Salt, 1 teaspoon
  9. Sugar, 1 tablespoon
  10. Vinegar, 1 tablespoon
  11. Tomato sauce, 4 tablespoon
  12. Starch, 1 teaspoon (stirred with 2 tablespoon)
Direction how to make sweet and sour sauce
  1. Soak tomato in the boiled water and let it free until the skin of tomato soft.
  2. Crushed the tomato and filter it. Get rid the dregs.
  3. Mix tomato juice with 150 ml water.
  4. Prepare frying pan and heat margarine. Fry red shallot, garlic, red hot chili pepper, and ginger until you get good smell. Add tomato juice.
  5. After that, add sugar, and vinegar. Stir it well.
  6. Add tomato sauce and starch.
  7. Cook the sweet and sour sauce until boiled and thick.
  8. Remove it from the stove and put it on the bowl.
  9. Sweet and sour sauce is ready to be used.

How to Make Terasi for Indonesian Cuisine

Terasi
Terasi is common ingredient that usually added into a dish for Indonesian cuisine when you cook in the kitchen. Terasi is made from small shrimp and need many processes to make it, such as grinding or pounding, and drying. When you make terasi, you need to add salt which has function as preservation.
Terasi has strong smell and usually used to make spicy dish but also used to make other traditional Indonesian cuisine. The usage of terasi also can be applied when you cook vegetables. The taste of vegetables will be more delicious, thick, and soft.
Actually, it is very easy to make terasi. And you can make it at home. Here is the recipe how to make terasi.

Ingredients:
  1. Small shrimp, 500 gram
  2. Salt, 100 gram
  3. Red coloring, as you desired *optional
Directions to make terasi
  1. Use the whole small shrimp, included head, skin, and tail.
  2. Afterwards, wash the small shrimp until clean. Set aside.
  3. Mix the clean shrimp and salt. Then, blend it by blender or pounded until soft. Remove it.
  4. If you like, you can add red coloring, then, stir it well.
  5. Pour the dough of shrimp into gauze. After that, squeeze the dough of shrimp until the water come out.
  6. You can mold the dough of shrimp as you desired, round or square.
  7. Dry under the sun until dry.
  8. If you want the dough dry faster, you can roast terasi into an oven.
  9. After the terasi dry, it will be ready to be used.

How to Make Soy Sauce from Coconut Water

Soy sauce is one of seasoning that usually used for Asian cuisine. Soy sauce divided become two, sweet and salty soy sauce. Soy sauce can be mixed to cook satay, meat soup, meatball soup, and many more. 
Commonly, people make soy sauce from soy bean but don’t you know that you also can make soy sauce from coconut water? Actually, making soy sauce from coconut water is easier and taking shorter time than using soy beans. Here is the step to make sweet soy sauce from coconut water.

Ingredients:
  1. Coconut water, 2 L
  2. Brown sugar, 800 gram
  3. Soy bean powder (A.oryzae, A. flavus, A. niger, Rhizopus sp), 200 gram
  4. Kluwek (Pangium edule Reinw : the fruit of the kepayang tree used as a spice), 120 gram

  5. Ginger grass, 40 gram (crushed)

  6. Garlic, 30 gram

  7. Lemon grass, 4 rods (crushed)

  8. Bay leaf, 4

  9. Natrium benzoate, 0.4 gram

  10. Pekak (Illicium verum), 6 gram

  11. Candlenut, 20 gram

  12. Salt, 2 tablespoons

  13. Sesame, 20 gram

Direction how to make soy sauce from coconut water

  1. Pekak and sesame are fried without oil for a while. And then both are grilled.

  2. Kluwek and candlenuts are blended.

  3. Filter the coconut water so that it will be clear from dirt. Pour into sauce pan.

  4. Add brown sugar, garlic, soy bean powder, kluwek, candlenuts, pekak, and sesame.

  5. Cook the mixture of coconut water and the seasoning until you get yellow color and starting thick.

  6. Add lemon grass, ginger plant, bay leaf into sauce pan.

  7. Cook the sauce pan with small fire and keep stir for about 2 hours or until the liquid changing become black and thick.

  8. Afterwards, remove the soy sauce from stove and let it cool.

  9. In order to make soy sauce have long life, you can add natrium benzoate.

  10. After the soy sauce cool, filter it and pour into clean and sterile bottle.

  11. Soy sauce is ready to be used.

Tips how to make soy bean powder

  1. Soak 1 kg soy bean with 3 L water for 10 – 12 hours.

  2. After that, wash the soy bean to rid the skin of soy beans.

  3. Add water 3 L and boiled for 1 hour. Remove from stove, then strained.

  4. Put the soy beans into wood container and cover it with other wood container for 3 days.

  5. After 3 days, you will see that the soy bean has fungus.

  6. Afterwards, spread out in the sun until dry.

  7. Grill the dry soy beans and filter it until you get soy bean powder.

How to Make Yakiniku Sauce to Grill Meat in the Japanese Food

Yakiniku is one of way to cook in the Japanese food. That is mean, cooking grilled meat or roasted meat on the ember or griller. Yakiniku are included variety dish like meat, pork, innards, beef steak, lamb, and barbeque with dipper sauce. One of ingredient to make yakiniku sauce is mirin. Mirin is Japanese ingredient to cook just like making teriyaki sauce. Which it content alcohol 14%, and sugar 40 – 50%. You can find mirin in the Japanese store.
Yakiniku is often to be called as Korean barbeque. Nevertheless, Japanese yakiniku is often different than grilled meat from Korea, like the way to soak the meat. Most of people believe that yakiniku dish came from innards that called Horumonyaki. Horumonyaki was created by Korean immigrant in the Kansai area after World War second. Here is the recipe how to make yakiniku sauce.

Ingredients:
  1. Beef sukiyaki, 400 gram
  2. Big onion, 1 (finely chopped)
  3. Green paprika, 1 (finely chopped)
 Ingredient for dipper sauce:
  1. Garlic, 2 (grated)
  2. Ginger, 1 cam (grated)
  3. Japanese soy sauce (Kikkoman), 100 cc
  4. Mirin, 50 cc
  5. Sesame, oil, ¼ teaspoon
  6. Salt, ¼ teaspoon
  7. Sugar, 1 teaspoon
  8. White pepper, ¼ teaspoon
Direction to make yakiniku sauce:
  1. Mix all of ingredients to make yakiniku sauce.
  2. Stir it well until unite.
  3. Yakiniku sauce is ready to be used to grill your dishes.
How to cook yakiniku:
  1. Heat margarine then grill the meat or chicken meat, onion, and green paprika until done. Turn it side by side.  
  2. Usually, yakiniku is served together with dipper sauce.
Tips:
When you are going to grill your meat with yakiniku sauce, soak the meat into sauce for about 15 minutes.

Simple Way to Make Teriyaki Sauce for Japanese Food

This recipe is made to create 1 L teriyaki sauce. One of ingredient to make teriyaki sauce is mirin. Mirin is tradition seasoning for Japanese food and it is contain alcohol. Mirin has yellow color, sweet taste, contain sugar 40 – 50%, and alcohol 14%. Mirin is used for Japanese dish which it processed by nimono way (boiled by salty soy sauce and dashi) and mixture for variety of sauce such as for kabayaki (tare), sauce for soba (soba-tsuyu), sauce for tempura (tentsuyu) and teriyaki sauce.
Content of alcohol inside mirin can relieve the odor of fish and reduce broken risk when the food is cooked. The content of mirin also can be used to add sweet flavor for the food you cook and to make your food has good smell. And here is the simple way to make teriyaki sauce.

Ingredients to make teriyaki sauce
  1. Mirin, 500 ml
  2. Shoyu (Japanese soy sauce), 500 ml
  3. Broth, 500 ml *
  4. Sugar, 400 gram
Direction to make teriyaki sauce:
  1. Boil all of ingredients so that the alcohol inside mirin evaporates.
  2. Simmer the sauce with small heat for 30 minutes until the broth thick.
  3. Remove the sauce and filtered.
  4. Let the sauce cool in the temperature room and can be kept in the refrigerator for many days.
Tips*
  1. Meat teriyaki sauce use meat broth that made from beef with low fat, water, onion, and leeks. Boil the broth until you get half portion, and then filtered. To make 500 ml broth, you can blend onion (3), leeks (2 rods and finely chopped), water (700 ml).
  2. Seafood teriyaki sauce (fish, shrimp, squid) use fish broth. The broth is made from head of fish, fish’s bone, water, ginger, and garlic. Boil the broth until you get half portion and then filtered. To make 500 ml broth, you can blend garlic (3), ginger (2 cm), water (600 ml).
  3. The taste of salty and sweet of you sauce is depend to your desire.
