Fish with spicy and sour sauce
Fish with spicy and sour sauce can be made for your family’s menu. It is very simple to make it and you can serve it for family gathering. And here is the recipe how to make fish with spicy and sour sauce.

Ingredients:
  1. Fish (snapper, milkfish), 600 gram (cut into 2 – 3 pieces)
Seasonings:
  1. Lime juice, 1 tablespoon + salt, ½ teaspoon
  2. Red shallot, 8 (sliced)
  3. Garlic, 3 (sliced0
  4. Red hot chili pepper, 6 (rid the seeds and sliced diagonally)
  5. Ginger, 2 cm (sliced finely)
  6. Lemon grass, (sliced finely)
  7. Turmeric, 2 cm (roasted and then crushed)
  8. Green tomato, 3 (cut into two pieces)
  9. Turmeric leaf, 1 stalk (cut)
  10. Scallions, 1 stalk (sliced diagonally)
  11. Orange leaves, 3
  12. Basil, 1 stalk
  13. Salt, 1 teaspoon
  14. Sugar, 1 teaspoon
  15. Oil, 3 tablespoon
  16. Water, 1 L (boiled)
Direction:
  1. Rub the fish with the mixture of lime juice and salt. Set aside 15 minutes.
  2. By using frying pan, heat the oil and then fry red shallot, garlic, hot chili pepper, ginger and lemongrass until you get good smell. Remove it.
  3. Boil 1 L water and add the fried seasoning above into sauce pan. Stir it well.
  4. Add fish and the rest of seasonings. Stir it well until the broth of fish boiled.
  5. After that, cook fish with spicy and sour sauce with small flame and cook it until the broth only a half.
  6. Remove it from the stove and pour the fish into a bowl.
  7. Fish with spicy and sour sauce is ready.

How to Make Fried Fish with Tomato Sauce

Ingredients:
  1. Carp fish, 1 kg (cleaned)
  2. Oil, 500 ml
  3. Water, 200 ml
Seasonings:
  1. Tomato, 5 (sliced finely)
  2. Red shallot, 8 (chopped finely)
  3. Garlic, 3 (chopped finely)
  4. Red hot chili pepper, 3 (chopped finely)
  5. Ginger plant, 2 cm (crushed)
  6. Bay leaf, 3
  7. Brown sugar, 50 gram
  8. Salt, 1 teaspoon
  9. White pepper, ¼ teaspoon
Direction to make fried fish with tomato sauce
  1. After carp fish cleaned, make scratch on fish and then seasoning with salt and white pepper. Fry the fish until dry.
  2. Fry the red shallot and garlic. Stir it well. Add hot chili pepper, tomato, ginger plant, and bay leaf.
  3. Afterwards, pour water, brown sugar, and salt.
  4. Cook the sauce until boiled. Remove it and pour the sauce on to fried fish.
  5. Fried fish with tomato sauce is ready.

Mashed seasonings:
  1. Red shallot, 10
  2. Garlic, 6
  3. Coriander, 1 tablespoon
  4. Red hot chili pepper, 4
  5. Candlenut, 5
  6. Ginger plant, 2 cm
  7. Salt, 1 teaspoon
For spread:
  1. Sweet soy sauce, 4 tablespoon
  2. Butter, thawed
Direction to make grilled fish
  1. Prepare carp fish. Slice with the knife some parts of carp fish so that the seasoning can be absorbed.
  2. Sprinkle with salt, white pepper, and lime juice.
  3. Set aside for about 5 minutes.
  4. Prepare griller. After carp fish ready spread with butter and sweet soy sauce.
  5. Grill the carp fish side by side. Spread it again by mashed seasoning with butter and sweet soy sauce.
  6. Grill it again. Do this 2 or 3 times so that the taste of grilled carp fish more delicious.

  9. Lemon juice, 2 tablespoons

Direction to make hot razor clams:
  1. Heat the oil in the cooking pan and then sauté garlic and onion.
  2. Pour water, salty soy sauce, tomato sauce, spicy sauce, salt, sugar, orange leaf and cook until boiled.
  3. Add red hot chili pepper, razor clams, lime water, paprika and leeks.

Ingredients:
  1. Carp fish, (1), 500 gram 
  2. Tamarind water, 2 tablespoons
  3. Liquid margarine, 1 tablespoon
  4. Oil, 3 tablespoon
  5. Turmeric, 2 cm
  6. Lime water, 2 tablespoons
  7. Garlic, 4 (pounded)
  8. Coriander, 2 teaspoon (pounded)
  9. Salt, 1 teaspoon
Blended seasonings:
  1. Red hot chili pepper, 4
  2. Garlic, 3
  3. Red shallot, 7
  4. Tomato, 2 (finely chopped)
  5. Sugar, 1 teaspoon
Directions:
  1. Clean carp fish from scales, gills, and entrails. Cut the back of carp fish but do not break it. Clean it again then set aside.
  2. Mix the turmeric, lime water, garlic, coriander, and salt. Coat to fish’s surface, and let it free for half hour until the seasoning absorbed.
  3. Sauté the blended ingredient and then add tamarind water. Cook it again until done.
  4. Grill carp fish on the ember or griller. Turn the fish to other side while smearing liquid margarine with the cooked ingredients.
  5. Spicy carp fish will be ready after the color changing and the meat is soft.
  6. You can eat spicy carp fish with lettuce, spicy dish or spicy soy sauce and rice.
